Python3 10 update #34

Reference Issues/PRs

This PR ensures support for Python 3.10 as many libraries such as torchgeohave dropped their support for Python 3.8 since NEP29.

This update also comes with improved READMEs instructions and adresses issue #6 .

What does this implement/fix? Explain your changes.

Major improvements

Updated major packages' versions
Fixed dataloaders to be compatible with new package versions
Changed functionnal torchmetricscalls to match new package version (#6)

Minor improvements

Updated trainers config files
Updated requirements names to offer both Python 3.8 and Python 3.10 requirements options
Updated github workers config files to use Python 3.10 requirements files by default
