Update caddy config examples to caddy v2 #107

This PR adds caddy v2 config snippets for the use cases in support/readme.md and moves each old caddy v1 snippet to a collapsed section.

Let me know if you'd like to change anything before merging - specifically whether you'd even want to retain the caddy v1 snippets given v2 was released a few years ago already.

Thanks a lot for this - I've been wanting to do a caddy v2 config for a while, but didn't find the time !
