Hi! Late to answer, but at least now I'm doing some work on the categories ...
1) Do you think, I should remove all/most of tourism=information from the category? I think it would make sense to create a category 'information' under 'culture and religion' with all these things (sign posts, maps, information boards, ...).
I would keep information=office in services though (because usually you can buy tickets there, ...). Also maybe information=terminal?

Thanks for your comment. I designed the history-category to include historic objects, e.g. castles, etc. So I think, that board_type=history would not fit this category. I think, they fit into the tourism category. Maybe I should include all boards in the tourism category within the culture and religion parent-category too?
Yes, with this definition it does not fit in there.
boards are now shown in Dienste->Tourismus, together with all guideposts. I like your idea to move the boards away from the "Dienste-Tourismus" to "Kultur und Religion-Tourismus".
Another thing about boards: There is the tag "board:title" which fits most of the time better than "name". See https://wiki.openstreetmap.org/wiki/Key:board:title It would be nice, if this tag is used instead of showing "Namenlos".
A few comments about classification
1/ Tourist information panels (see board and board_type ) shouldn't be in "Services > Tourism" menu as they are not exactly services. I think they should be in "Culture and Religion > Tourism" It makes more sense to me.
2/ In "Services > Communication" I see "post box" and other things mixed with some "offices" (newspaper, publisher or company from the ICT sector,...) I think I understood what you wanted to do: use "communication" as a thematic In my opinion it doesn't work well.
Perhaps you can create some sub categories in Offices. Examples : Communication :
Audiovisual :
Press / Edition :

And I think that "Law" and "Financial" should be in "Services > Offices" too
