organization is hard coded to 'platform' in the global defaults #184

https://github.com/ploigos/ploigos-software-factory-operator/blob/main/roles/tssc-platform/deployment/templates/ploigos-platform-config.yml.j2#L12 is hard coding platform as the organization.

The organizational field of the PSR is meant to be like "marketing" or "navy" or like, whatever is a logical organization within the client. It should not be hard coded to anything let alone platform.
