chore: update docs to use remix v2

Why

• The website was unable to be upgraded because of it's patch on remix V1. We needed to move to remix@2 with vite to use the MDX plugin & then get that working on vercel (again). In addition there was always (some) issues with stitches and remix, we've moved to vanilla-extract which has been better overall.

What

• updates remix to v2
• removes stitches for vanilla-extract
• updates docs deps
