Update use-cannon, demos to r3f v6 #175

Addresses #174 and issues discussed on Discord. I realize this is a lot of files changed at once, note that most changes are a simple swap of react-three-fiber for the beautiful new monorepo (@react-three/fiber).

Tested, and useThree() functions as expected in demos. setDefaultCamera has also been replaced.

I was pinged directly on Discord to fix this, and I may be out of the loop with recent API changes.
