Expected behavior

Is it possible to include parametes like "ForceCheckout", "ListExperience" into Set-PnPList?

Actual behavior

The additional parameters are not available

ForceCheckout - and ListExperience are now in the PowerShell cmdlets.
Please update to the new cmdlets ...

Your version (v 2.20.17) is from November 2017. Update to new July 2019, and see if it works.
