We want to make sure the RTD documentation works for Awpy 2.0 release

@adisujithkumar I'll let you handle the parser_output.rst file since you're doing the Jupyter notebook

We should take the notebooks in #311 and ensure they can show up. We also need to fix the docs workflow (currently disabled)
