Update documentation to include data versioning #234

Update documentation to explain how data versioning behaves. Include examples that demonstrate using the data version parameter.

Not directly related but can we also update the documentation on fields to be a little clearer and I think we may want to add some documentation on CRIDs - how Hydrocron deals with different CRIDs.
