Objective

Add block validation process explanation, similar to the mermaid diagrams.

Better document the block validation process.

Deliverable

[ ] Update shared/docs/PROTOCOL_STATE_HASH.md with block validation process explanation and mermaid diagrams.

@gokutheengineer I added the consensus label. Just a NIT, but it does help with filters every once in a while.
