Is it possible to update (currently using 5.8, would like to update to 5.10) without losing all of my saved passkeys?
Is there a way to dump the flash of the device so I can restore incase of data loss?

You can upgrade the firmware without loosing data. Data and firmware use different memory regions which do not overlap.
Look for pico-tool from RPi repo to dump the entire flash.
