Like's already been done for changing mouse acceleration profiles and various workspace settings, this is another option that I think would be good to bring across from GNOME Tweaks. As I work a lot from home, it's helpful to me to have a reminder at the top of my screen of what weekday it is. I'm sure a lot of other users find this helpful as well, as I often see it enabled in screenshots of other peoples' customised GNOME desktops. The option's already built into GNOME and doesn't have any negative consequences on user experience or aesthetics so I don't see any reason it shouldn't be in the standard settings application.
As for where to put it, either in the Date & Time section, with the 'Time Format' option,
Or in the 'General' section of COSMIC's 'Desktop' settings, under the 'Top Bar' subsection,
