fix: Install extra files to ensure themes work #448

This ensures that all of the necessary files are installed into the correct directories for the theme.

This ensures that the theme can be selected and installed on any OS, and makes overriding certain things easier/possible in Pop_OS. These are standards-compliant ways to do the theme.

@pop-os/quality-assurance For testing this PR, please ensure that the theme looks correct, and that both the Pop and Pop-Dark themes can be selected in GNOME Tweaks. We need to check the GTK/Applications theme as well as the Shell theme (which requires the User Themes extension).

We should also ensure that the GTK theme can be selected from the GTK Inspector.
