Looks like something got broken while you were experimenting with different themes. The stock pop-dark theme is working fine on clean installs:

I removed ~/.config/gtk-3.0/gtk.css
, then re-applied the default theme and it fixed itself.
Really sorry, I should have tried fixing it myself.

Describe the problem: Hello! This is my first time filing an issue so kindly bear with any mistakes I make. So yeah, basically many of the basic utilities included in the system such as Calculator, Calendar, SysMonitor etc. are pretty much unusable in any dark theme(even pop-dark). Like in the calculator, the output windows attains a white color in the output window, while the output text becomes a very light shade of gray.
Steps to reproduce:
I first posted about this on reddit and folks commented that the apps adapt fine on their system, so you might not be able to reproduce the issue. I tried disabling all extensions but nothing helped.
Distribution: Pop!_OS 20.04 LTS
Pop version:
