Do you have extra icons installed? Could you have a terminal running with the command journalctl -f
and then start gimp both ways and see if you notice any error messages?
No extra icons, but journalctl -f showed this when running from launcher that didn't happen when running from the Application menu:

I have just noticed that the task icon actually does very briefly appear and then vanishes again. The app runs fine either way.

If you are in wayland could you see if the issue is present if running x11?
I appear to be running X11. No idea how to switch to Wayland, or even if that is a good idea.

I've recreated this once but after a while the icon returned without me doing anything. See if there may be an update or if just by waiting the icon returns

Issue/Bug Description: GIMP icon not appearing in task bar when opened from launcher
Steps to reproduce (if you know): If I open GIMP from the Applications menu, the task icon appears in the Pop Shell task bar. If however I open GIMP using the launcher (Windows key, then type GIMP) then the app still runs but the task icon does NOT appear in the task bar.
Expected behavior: Application icon should appear in the task bar regardless of how the application is launched.
