Solved.
I don't know why this issue began to happen, but I found a fix on Google.
I lowered the band from 151 to 48, and the 5ghz WiFi shows up now, on all OSs above.

How did you upgrade to 21.10? (Fresh install / Upgrade)

On RPI4, after last upgrade not connecting 5G WiFi, no 5G network is visible. 2.4G is OK.
Today I've installed a Ubuntu 21.10 and 5G WiFi was connecting but after a "dist-upgrade" and reboot, it stopped to work.
On RPI OS Buster its OK.
On RPI OS Bullseye since last release on January 5G WiFi not working.
I live in Brazil Region=BR and even if I change to US no network is visible, and to GB.
