Update shiny app to read from prefixed tables and deploy with Posit Publisher

Update shiny app to read from database with prefixed name (#33)
Make test deployments using Posit Publisher
- Confirm that shiny app deploys
- Confirm that notebook 1 deploys as jupyter
- Confirm that notebook 2 deploys as quarto
