docs: Update package versions in README #25

Updated the README to include the package versions used in this tutorial. Also, added a note about the availability of the runStaticServer function in the httpuv package. This information ensures that users have the correct package versions and are aware of any differences in functionality.

I have addressed the httpuv dev version issue in https://github.com/posit-dev/r-shinylive/pull/23/files#diff-b335630551682c19a781afebcf4d07bf978fb1f8ac04c6bf87428ed5106870f5

Given this, I do not plan to merge your version description or uncommented code changes as they are harder to keep up to date and installing {pak} should not be forced when installing {shinylive}.
