I suspect it is configured much like SpamAssassin, have a look here for the default values https://github.com/atech/postal/blob/master/config/postal.defaults.yml#L114 and add them to your postal.yml as necessary.

Aha, thanks, @willpower232! The pointer to postal.defaults.yml was a great hint :-)
