Good question. Two reasons I can think of now.
Some of my clients leave my services after the initial deployment of the server and they don't replace the server or OS for decades. On rare circumstances, a non-default service may result in errors if I auto-update is enabled for such service.
Another very rare reason is... some of my clients' code / app contain some MySQL specific syntax.
