UI updates and separation into analytics and default #18

Have addressed a number of UI fixes, including:

stopping users from trying to update pid parameters whilst spinner is in 'wait' mode
updated layout of pid parameter inputs and applying a min-width
stopping recording data when a hardware limit is reached
fixed the (minor) graph data point colour display issue
added a count to the graph to make it clearer why it stops plotting at a specific number of data points
increased the graph data points from 1200 -> 2000
updated image paths for vite

Have separated the ui/ folder into ui/default and ui/analytics for easy deployment of those different versions.
