repository: intending to change the repo name to neovim-config #3

As AstroNvim is the preferred way that Practicalli uses Neovim, I intend to rename this repository from astronvim-user-config to neovim-config.

This is simpler to write and even simpler to say :)

GitHub will redirect existing clone URLs to the new address, so there should be minimal disruption.

NOTE: Practicalli Neovim book will be updated to match the new address and changes published at the same time.

practicalli/astro is even easier to say and type, so that is what the config repository has been changed to.
