Updates the pravega operator version within the charts to 0.5.3

Purpose of the change

Fixes #551

What the code does

Changes the default version of the pravega operator within the operator charts to 0.5.3

How to verify it

Should deploy the latest version of pravega operator i.e. 0.5.3
