It seems like the mysql database is not using the proper collation settings for having emojis in some/most fields (see https://github.com/pretalx/pretalx/issues/965).
Maybe it would be enough in the setup to specify the utf8m4 collation as default. [see: stackoverflow#45729326-comment?
