Doesn't it make more sense having one string tutorial and one complex data tutorial?

Thanks for the feedback. Right now the plan is to have two tutorials. A basic one on strings and displaying text (http://processing.org/learning/text/) and one on data (a new one in progress). When they are finished please let us know if things aren't clear or are missing!
