https://issuetracker.google.com/issues/322214617#comment15 BOM 側のアップデートがやらかしているようで、androidx.compose.material3:material3-*:1.2.0-rc01 を使うように指定してあげれば一旦は直るようだが、これっきりのアップデートでその対応をするのは変なので一旦次の BOM を待つことにする
