Also need to set a default args.file_set_name when running punx demonstrate.

Coverage remained the same at 95.221% when pulling 0e4fe8e1f4a5d6d1c11505af4cd6e54b77c51c3c on 8-argparse-more-robust into 0311774744547d8f07c3e08aa7d856c7059199b1 on main.

@carterbox This is ready for review. Also fixed punx demonstrate and switched a couple strings nearby to f-strings.
