I have deleted most unused assets as well as fixed small issues of scenes using assets they should not.
For example:
The ModuleSelectButton used the default Godot icon instead of the new one Sahba created
I deleted a couple test scenes and subscene manager test
There are still some unused assets such as the Gel Tray where I kept the ones in the Resized_Images folder as I was not sure if we intend to use those, because the ones in the Images folder that we are using now seem fine to me.
There may be a few more unused assets I have missed as there were a lot I had to remove, so a fresh set of eyes may uncover some more that we should delete.
I also replaced the ExampleMenuLabobject example in the documentation, since I feel it's better to show a more complex example and that way we delete this object that is otherwise unused.
