Rename repository to sbom-convert #4

The name "go-cli" does not seem fitting for this CLI. It would be more appropriate to rename the repository as "sbom-convert".

Following the merge of #3, the library will be renamed to sbom-convert, which will be automatically set by GoReleaser. The review process included reaching a consensus, so there should not be any outstanding issues with the renaming. It would be ideal to rename the repository to sbom-convert and close the issue. 👍
