Move Mutable NFTs to new Guides section #269

Guides is a new section (created alongside the Batch Minting guide) aimed at knowledgeable developers who want to solve a specific problem. It's a better home for Mutable NFTs than the Concepts section.

Moves mutable-nfts.md into the correct folder
Changes entry in config.js sidebar listing
