Addition of Encyclopedia #274

Creates the folders, formatted md files, graphics, and navigation additions for the release of of the Encyclopedia of NFTs. @mishmosh, should you be the one I'm tagging on this, or should I loop someone else in for review?

Okay so the Sidebar Navigation is not turning out how I thought it would — need to do some reformatting
