Added more potential projects & pillars in the manifesto

Updated as needed. Should we make an Airtable or Google sheet to start filling in the project ideas and how to begin them?

Hmm... I meant, have one PR with all changes (except Pillars) and another PR - with only pillars. So that comments and discussions can be invited just for this one (the pillars).

Making another file, is ok, but will no longer have the context, right?

le'ts close this one and try with another?
