Update SDL2_image to development version #57

This was required because we want pkg-config to work and the latest stable does not support pkg-config. I still need to give this a quick test.

I've tested it now using this program: https://github.com/sharkwouter/psp-sdl2-image-test

It works like expected. Please review.
