Make small string changes to labels and explanation text #418

Motivation

To revise labels and explanation text for consistency and polish

Requirements

Suggested changes * [Action Log](https://app.pubpub.org/c/unjournal-demo/activity/actions): Sidebar label (“Action Log”) vs. page title (“Action Activity”) * [Workflows](https://app.pubpub.org/c/unjournal-demo/stages): Sidebar label (“Workflows”) vs. page title (“Stages”) * [All Pubs](https://app.pubpub.org/c/unjournal-demo/pubs): Sidebar label (“All Pubs”) vs. page title (“Pubs”) * using three-dots menu, “Edit Pub” option vs. “Update Pub” title on modal. (tiny note: the first option, “Move Pub to a different Stage” is rendered in smaller font size than other field titles) * Create Pub modal: “Pub Type” appears in second line vs. button text “Select PubType,” without the space * capitalization inconsistency: Pub/pub is rendered as “Pub” or “pub” throughout the interface (including explanation text). Type/type and Stage/stage too. Consistency across similar elements (e.g, create Pub button is “Create Pub” vs. “Create type” for PubType)

adding this here (though maybe it should be its own issue) that there isn't explanation text on the Workflows Manager (graph view) for the "Help" button and for the (i) buttons when configuring the http action's Output Map.

@sheishistoric The (i) buttons do have text on the http action's Output Map, but they only show on hover! We should probably make it so that they either do not appear to be clickeable, or make them show the text on click as well (probably the latter)
