Ctrl+N for structure editor on a windows machine opens a new window

I doubt we can capture this command - do we have a different hotkey?

Do some research into what other systems use.

Success Criteria

• [ ] There's a hotkey that's the same for both windows and mac that users can use, which doesn't do anything odd.
• [ ] The dropdown display hint shows the new hotkey.
