I'm not familiar with the Pynq platform. but it has a zynq on it, so the flow to generate programmable logic, and processing systems will be very similar. however, the software, linux etc. for the pynq will for sure be different. I cannot say how difficult it is to port pulpino to this platform, but it's for sure possible:)
But I don't think setting the env variables to zybo is a solution. I'd rather check for all board specific commands and replace them for the pynq.
