[New project Wizard] Allow selecting multiple ESC env when creating new project #391

When using the New Project Wizard, currently a user is only able to select a single ESC environment. This is quite limiting for the user, but also because Pulumi.<stackName>.yaml supports many ESC environment.

Instead of a dropdown, the user should be able to tick / multi-select ESC environments they wish to use.

Affected feature
