Add detailed diff recordings to PF diff tests

This change adds recordings of the detailed diff sent to the engine to all Diff cross-tests in PF. This helps with spot-checking the results and troubleshooting issues.

This comes after https://github.com/pulumi/pulumi-terraform-bridge/pull/2629 in order to reduce the noise in the change there.
