(maint) Update changelog for 2.1.1 #99

Won't completely satisfy Snyk, since there's still an outstanding jackson CVE, but should we update clj-parent while we're in here, so that Snyk at least yells a little less?

I bumped clj-parent to 5.2.11 and I also included some test fixes that reduce the run time from a little >5 minutes to ~60 seconds.
