refactor: rename `environmentRoot` to `envRoot` and `environmentProject` to `envProject` in all places

Instead of environment for the options (e.g. --environmentRoot could be --envRoot)? It's shorter to type and is just as informative, I think.

Applies to:

• environmentRoot -> envRoot
• environmentProject -> envProject
