ViewModel should not be a MonoBehaviour

Monobehaviours can create weird default values and encourage bad habits like adding values in the editor.
We should move this EITHER to ScriptableObject or just a regular Object

In the case of ScriptableObject:

Do we create a new instance of the object for a given data contex?
Do we have a way to add DefaultValues?
How can we do this in a way that doesn't break existing projects? Do we still use ViewModelProvider?
