Mostly deletions to make it easier for new package authors:

Removed Click CLI option
Removed non-pytest option. Automatically uses pytest
Removed option to not create author file, and renamed it to CONTRIBUTORS to match our guidelines
Removed non-open source license option
Removed unneeded tests (based on the simplifications above)

The deletions could be reconsidered, but thought it would be best to start as simple as possible.
