Future: make sure we support eic field #141

Right now we don't support an eic field as we haven't been collecting it. However i think it's important to recognize all of the work a EiC does (even on presubmissions). As such once we update the templates (this will be over time) we should also make sure our model supports an eic field. that field will be a list of people potentially similar to the maintainer field.
