[Github Actions] Tests hang on windows #267

Related to #265 but somewhat of a different issue: with micromamba >= 0.21 tests involving matplotlib's pyplot.show()/pause() hang forever on windows. For now, the only workaround is to revert to micromamba 0.20, see also #266 .
