DRAFT: JOSS paper #179

Hi @rnfinnegan,

this PR is to work on the JOSS paper collaborative. We won't ever merge this through to the main branch since we don't really want the paper in the main line of code. But once we are happy with it we can submit the paper to JOSS from this branch and then close this PR :)

Here are few things to discuss tomorrow:

Casing of platipy? PlatiPy? PLATIPy?
Examples of published papers which have used PlatiPy features?
Updates affiliations

Final steps before submitting:

[x] Phil Reference PESM paper (once DOI is produced)
[x] Rob Check affiliations (and add any missing)
[x] Rob confirm middle initial (N) in name
[x] Phil Create a new release (0.6.0)
