Updates README, remove unnecessary prints during the workflow and add consistent logging.

@Eddy-JV could you please add any disclaimers that data sources require into the logger (check prepare_sector_network here or add_export for reference). Check especially the ports and airports dataset you found.

This should be added in a better way in readthedocs, but I believe this is importatant to do before announcing that the model is there.

@davide-f please check the readme and see if we should also add the discord channels and similar
