Update COPR package #661

This closes #645. Switch to (manually triggered) pyp2spec builds. This just updates the Readme. The process created for #565 is not necessary any longer. ~When this is merged, I will archive transitions-distributions for now.~ I changed my mind and will use transitions-distributions to document the different installation processes.
