Fix installer issues #8

Please, consider and check these changes to allow running pyvista-gui with newer Qt5 version and using pyvistaqt as an interactor

This started as a prototype and has gone unmaintained for the last ~3 years. If your changes are working, then fantastic! But if you're using this package, I'd suggest perhaps maintaining your own fork as I don't think the PyVista dev team has the bandwidth to maintain this package.

We're using this at PyAnsys and I'll support it (the best I can).
