Refine and bolster examples #56

This PR does the following:

Add a requirements.txt file to the examples folder for extra dependencies in example notebooks
Add two small data files for use in examples, replacing absolute path references on a specific machine
Placed data files in separate subfolder
Add an example sea_temps.ipynb which shows how to use PyVistaXarraySource with a Pangeo Forge dataset (Resolves #50)
