0.12.1.post0: pin nbconvert to fix docs

Description of the change

This PR temporarily fixes #475 and #494 by pinning nbconvert <7.14.

I've opted to make a post-release 0.12.1.post0 so that the stable docs look nice again. Hopefully, the PDF build will be back as well.

This pinning fixed the issue when I tested locally. To be sure it fixes the PDF issue on Read The Docs' servers, I've pushed this branch to the orix repo and asked RTD to build the docs from it: https://readthedocs.org/projects/orix/builds/.

Can someone have a look at this one, so we can fix the tutorials and return to building the PDF docs as well?
